This is the recipe I followed: I got 8 mooncake
1/4 cup sugar
1 egg yolks
1/2 cup salted butter
1 cup all-purpose flour
1 cup jam, (I chose raspberry, but you can chose what ever you want)
Preheat the oven to 375 degrees/190 celsius
Combine the butter, sugar and 1 egg yolk and stir.
Mix in the flour.
Mix in the flour.
Refrigerate dough for 15-20 min. Take something over.
Form the dough into one large ball and cut in 16 pices. and flatten them out. Take 1 teaspoon of jam midle of 8 of them and take lastes 8 pices over and press gently around.
Brush each cake with the other beaten egg withes.
Bake for about 20 minutes or just until the outside edges are slightly brown.
